Pearl onions in sherry vinegar

Tapas classic with a sweet and sour note

This tapas dish is also great as a side dish with boiled or grilled meat and game dishes.

Sherry vinegar has a very special and distinct flavor. It is made with sherry and is ideal for salads, sauces and meat dishes.

If you don’t have sherry vinegar, you can also use a good balsamic vinegar.

Ingredients for four servings

  • 500 g of small onions (or shallots)
  • 6 tablespoons olive oil
  • 200 ml sherry vinegar
  • 100 ml sherry
  • 2 thyme sprigs
  • Salt, pepper
  • 1 teaspoon of sugar

Preparation

Peel the pearl onions.

Heat the olive oil in a pan and fry the onions to golden yellow. Sprinkle the sugar over the onions and briefly caramelize in the pan.

Pour in the sherry and sherry vinegar. Add the sprigs of thyme. Cover the onions with a lid and simmer for about 30 minutes on low heat.

Allow the onions to cool, and then serve cooled in a small bowl.

Preparation time: 30 minutes, simmering about 30 minutes.
